I just love tortillas, but I mean who doesn’t? :) They are just so fun and easy to make, you can fill them with almost anything and it will probably work haha From simple scrambled and avocado morning wraps to grilled fish, fried chicken or even sizzling hot prawns! Maybe I can publish one of each every week, what do you think? :D
Let’s start with this lamb wraps first! I saw this recipe at Delicious Magazine website and just had to make it. Usually, I use the recipe just as an inspiration and always change some parts of it, adding or swapping ingredients to make it just perfect. But Delicious Mag did a good job here so I didn’t need to change anything except adding salad and a few chillies to spice everything up :) You just can’t call them tortillas if they are not HOT and spicy right?
Mexican Lamb Tortillas
Ingredients – Serves 2
⋅ 1 tbsp olive oil
⋅ 200g lamb (diced lamb leg)
⋅ 1 purple onion
⋅ 1tsp smoked paprika
⋅ 1tsp cumin
⋅ Juice of one lime
⋅ 1 garlic
⋅ 1 ripe avocado
⋅ fresh coriander or parsley
⋅ tortillas
⋅ soured cream
⋅ red chilli or pickled jalapenos
⋅ salt and pepper
⋅ salad leaves
Method
1. Put a large non stick frying pan over a medium-high heat and add the olive oil and sliced red onion (leave one tbsp of onion for guacamole!). Gently fry for 5 minutes, stirring occasionally, then add the chunks of lamb leg, smoked paprika, cumin, the juice of half lime and one garlic. Cook, stirring, for 5 minutes or so until the lamb is cooked but you want it still a bit pink inside. Season with salt and pepper and set aside.
2. To make guacamole – mash one avocado with the red onion, juice of half lime, salt, pepper and coriander (I’m not the huge fan of fresh coriander so I use coriander powder which I found less intensive and overpowering). Serve immediately with the lamb, salad, warm tortillas and dollops of soured cream, add pickled jalapenos or red chilli for a little kick!
Perfect dish for entertaining or a quick dinner under just 30 minutes!
