…as if I didn’t have enough cheese during my last trip to France! You who follow me for longer sure knows I have a weak spot for cheese. One of my greatest fears is that one day my GP will tell me that I’m dairy intolerant haha no but seriously, can you imagine life without brie, melted camembert, burrata, parmesan…? Of course you can’t! :) So let’s move on to this simple recipe, inspired with Waitrose recipe from May, perfect with a glass of chilled white wine on a terrace…
Ingredients
50g diced pancetta
1tsp chopped fresh rosemary
1/2 garlic clove, chopped
6 slices bread of your choice
1 pear
100g sliced brie cheese
handful wild rocket
Method
- Preheat the oven to 200 oC. Heat a couple of spoons of olive oil in a small frying pan and cook the pancetta for 4-5 minutes until crisp. Add the rosemary and garlic, cook for another 30 seconds then remove from the heat.
- Lightly brush the bread slices with olive oil and slice the pears arranging them on the bread. Transfer to a baking sheet and bake for 10min until the bread is crunchy. Take them out from the oven, add sliced brie on each slice and spoon the pancetta and rosemary oil over each, return the baking sheet to the oven for another 5min, until the brie has melted.
- Scatter a little rocket over each and serve! :)
