It’s been a while since my last recipe….been busy eating around London in some really awesome places lately, hanging out with some amazing people from all around the world and I really can’t be grateful enough!! If you’re not already you can follow my London adventures on Instagram (@hungry_anja) But I must be honest, I do miss cooking. I mean I do still cook every day but regular weekday dinner meals, a piece of salmon and some broccoli, quick salad or something. Nothing super exciting and new to me and you guys. Occasionally, I do surprise myself with sudden breakthroughs of creativity in the evening, unfortunately, it’s just too dark to take some nice photos :)
Anyways, here it is, my quick and easy recipe on how to use leftover potatoes! Form little patties, shallow fry them and serve for breakfast, brunch, lunch…as a side dish or as a main!
Recipe
Patties x8
- 350g leftover mashed potato
- 3tbsp gram flour (or any other would work too I think)
- 1 egg
- chopped chives or scallions
- 2 pinches of baking powder
- salt and pepper
For serving
- cottage cheese or hummus
- mixed salad leaves
- parma ham or smoked salmon
- tomatoes
- extra chopped chives and a drizzle of olive oil for serving!
Extra tip -> you can add into the mixture a handful of grated cheddar, or bacon, ham, salmon, your choice of herbs…whatever you like! This is a basic recipe and you can play with it!
Method
In a large bowl, stir together the mashed potatoes, chopped chives, baking powder, egg, seasoning and 3 tablespoons gram flour until combined. Using your hands and a bit of extra flour (to avoid sticking the mixture to your hands), divide the mixture into 8 portions. Roll each portion into a compact ball then flatten it into a 2cm thick pancake
Heat 3 to 4 tablespoons of olive oil in a large non-stick pan over medium heat. (Add enough oil to thoroughly coat the bottom of the pan.)
Fry the pancakes, in batches, until they’re golden brown and crispy on both sides, 3 to 4 minutes. Add more oil to the pan as needed between batches. Transfer the pancakes to a paper towel-lined plate.
Serve these patties warm, topped with cottage cheese, salad, parma ham or smoked salmon, tomatoes and garnished with some chopped chives and a drizzle of extra virgin olive oil. I think this is just a perfect brunch dish but you can serve it as lunch or dinner too :)
