Happy 1st of December, hello Christmas Cookies! :)
This healthier version of chocolate rum balls is so quick & easy to make and I’m sure you’ll use this recipe over and over again. Made with only 6-7 ingredients they are vegan and completely dairy and gluten free. The addition of rum is just making them even more indulgent, plus we all know that chocolate and rum is the best combination ever :D
Ingredients
(15 truffles)
120-130g almond flour
150g pitted Medjool dates
2 tbsp cacao powder
1 tbsp coconut oil
1 tbsp maple syrup
2 tbsp of Rum
2 pinches of allspice (you can add spices like cinnamon, ground cloves etc. to make them more Christmassy)
More Cacao powder for coating! Feel free to coat them with almond flour if you find cacao too bitter.
Method
Blend all of the DRY ingredients into a fine flour using a food processor. Make sure to use pitted dates :) Add melted coconut butter (use the microwave to avoid overheating!), maple syrup and rum. Mix well.
Using your hands, roll the preparation into 2cm balls.
Gently roll the balls into cocoa powder and keep them in the fridge or on the balcony if it’s cold enough where you live :)
So yes, this is it, all done under less than 15min! Hope you like them as much as I do :)
