Hello there #PastaWednesday! For all of you who don’t have a clue what I’m talking about, I started #PastaWednesday on my Instagram feed @hungry_anja to share more recipes for delicious pasta sauces we all love so much! It’s also a good thing for me I think because I’m pushing myself to document/write all the recipes that I would usually cook for myself and my husband simply using what I would find in the fridge and improvise with those ingredients. This way I will write them all down so you too can cook following my recipes!
I have another quick and easy pasta recipe for all of you, hope you have your pans ready for cooking! How do you like the sound of delicate Parma Ham, earthy mushrooms in a creamy sauce drizzled with Truffle Oil to make this weekday dinner even more special :)
Ingredients (for 2)
200g pennette (smaller penne or any pasta of your choice)
150g portabellini mushrooms (sliced)
80g Parma ham (7-8 thin slices)
2 garlic cloves
100ml single cream
50ml white wine
50ml pasta water
40g grated parmesan cheese
2tbsp fresh chives (1 spoon for the sauce, other for serving)
Knob of butter + Olive oil
Truffle Oil (optional!)
Method
Cook the pennette according to the packet instructions, actually I would suggest cooking any pasta 2-3 min less then the instructions suggest just because it will continue cooking when you add it to the hot sauce. And we want our pasta AL DENTE, right?
Meanwhile, heat the olive oil + knob of butter in a frying pan and fry the mushrooms for 2-3 min before adding chopped garlic to the pan (you don’t want the garlic to brown too quickly). Saute together for additional 2min before adding parma ham, stir everything together for a minute and then add the white wine and cook for further 2 minutes.
Drain the pasta, reserving 50ml of the cooking water. Add that pasta water to the pan alongside with the single cream, let it simmer for a minute or two before adding the pasta, fresh chives, grated parmesan salt and pepper. Cook until the sauce has thickened a bit. Serve immediately topped with the Parmesan cheese, fresh chives and a drizzle of that magical Truffle Oil we all love so much!
