Is it a salad or is it a pasta? It’s both, Orzo Greek Salad! :) Meals like this are my favourite, especially during these warmer days, served with grilled meat/fish and enjoyed on a terrace. This salad would go great with my Greek Yoghurt Marinated Chicken, YUM! Had it with grilled sea bass today but next time I’m making Orzo Greek salad bowls with juicy greek yoghurt chicken. If you make too much, you can take it with you to work the other day, colleagues will be soooo jealous of your lunch :D
Ingredients (2-4 people depending if you are serving it as a side or as a main dish)
Salad
200g tomatoes
200g cucumbers (love using mini ones since they are less watery)
1/2 red onion sliced
20 kalamata olives
100g feta cheese
100g orzo pasta (cooked and then chilled)
Dressing
3-4tbsp olive oil
1/2 lemon juice
1tsp dried oregano
salt
pepper
Method
Cook orzo in salted water according to packet directions. Drain and rinse under cold water to stop them cooking further. Drain well and drizzle with a tbsp of olive oil, mix it well so the pasta doesn’t stick. In a small bowl mix together dressing ingredients, set aside. Slice all the veggies and pit olives if needed.
Place orzo and remaining Salad ingredients in a bowl or a platter/big plate like I did here, drizzle with dressing and toss gently to coat. Serve as a main dish or as a side to your choice of meat/fish! Enjoy :)
