Hi lovely people! The important news is that there are only 10 days left until my due date, can you believe that? Well, I can’t haha had a terrible headache the whole day yesterday and the day before, so I’m a little bit behind with all the recipes, but that chocolate coconut strawberry cake recipe will be here next I promise. But first here is step by step on how to make this summery Grapefruit salad perfect for this weather and warmer temperatures that are finally here! Have great weekend friends :)
Ingredients – for 2
1 avocado
1 grapefruit
1 mozzarella di Buffala or feta cheese
Handful walnuts (slightly toasted in a pan)
150-200g baby spinach (or watercress)
*add sliced fennel if you like, raw or grilled, parma ham would also go great!
Dressing
2tbsp balsamic vinegar
1tbsp honey
1tsp mustard
2tbsp olive oil
1tbsp grapefruit juice
Salt and pepper
Method
Place all the dressing ingredients in a bowl and whisk until well-combined; set aside.
Segment the grapefruit: slice off the ends of the fruit. Set on a flat work surface. Use a sharp knife to cut the peel and white pith, following the curve of the grapefruit, from top to bottom. Cut between the membranes to remove the segments of the fruit and add them to the separate bowl.
Add the spinach, avocados and grapefruit to the bowl and toss with dressing (don’t add everything at once) to evenly coat. Add mozzarella and walnuts and drizzle with more dressing, serve with toasted sourdough and a glass of wine on a sunny terrace :)
